Irish Beef Stew

It does not have to be St. Patrick's day to enjoy this warm beef stew.

THE RECIPE

Winter Ratatouille

This warming stew is packed with delicious seasonal winter vegetables. 

Ingredients:

2 carrots

2 sweet potatoes, chopped 1 inch cube

2 turnips or rutabaga, chopped 1 inch cube

1 winter squash, peeled, cut 1 inch cubes

1 small onion, finely chopped

4 cloves of garlic, finely chopped 

1 tsp dried sage leaves

1-2 tsp sea salt, to taste

1/2 tsp Chile flakes (optional) 

1 jar (530 ml) organic crushed tomatoes

Olive oil

Pepper, to taste 

Instructions

  1. Place all veg in a pot with spices and tomatoes. Drizzle with olive oil and mix until ingredients are well combined.  
  2. Lower heat about 3-4 hours. Taste and adjust seasonal if necessary 
  3. Drizzle each serving with a little olive oil and serve some crusty bread.  

Parmesan Crusted Salmon with Lemon

 

Ingredients:

Butter or oil

Fresh dill

Parsley

Lemon  juice and slices 🍋

Green onions

Pepper and salt

Parmesan cheese 

 

Instructions

In a bowl whisk together the dill, parsley, lemon juice and oil or butter then pour it over the salmon and marinate for 1 hour.

Place the salmon on a sheet tray and add the cheese and butter to bake @ 400 degree 

Keep an eye on it as the thickness makes a difference in the time it takes to bake.

Set the salmon on a bed of arugula and serve with your favorite veggies

Irish Stew

Ingredients

Mirepoix (onion, carrot and celery)

Yellow potato

Garlic

Parsley and thyme

Beef broth concentrate 

Demi baguette 

Soy sauce or tamarind

Sherry vinaigre 

All-purpose flour or gluten free( to thicken)

Instructions

Wash and dry all produce and cook ground beef - breaking up while cooking. Season with good salt and pepper.

Cook the mirepoix and potato in butter or oil then add beef to mirepoix, sprinkle with flour.

Add broth, vinegar, soy sauce, tamarind plus 3 cups of water.

Meanwhile make the garlic bread and sprinkle with the herbs.
